Leeks In Olive oil (Pirasa)

This recipe has always surprised my guests who were dubious about the look of the dish and werent particularly fond of leeks in general. Pirasa (Leeks in olive oil or braised leeks) is very light and relatively easy to make. You may serve it warm or fridge cold; with a dash of lemon or orange juice added.

Ingredients

  • 4 branches of leeks (it is ok to use some of the green parts)
  • 2 carrots
  • 2 spoons of rice
  • Half cup of lemon or orange juice (or a mix of)
  • Salt
  • Black pepper
  • 1 cup of extra virgin olive oil

Instructions

  1. Chop your leeks into large or smaller chunks according to your taste. Once chopping is done wash your leeks well.
  2. Wash and peel your carrots and cut them into diagonal slices.
  3. Heat the oil in a deep pan and transfer your leeks and carrots to the pan. Saute the mix for a few minutes and add the washed rice, salt and black pepper and let your mixture simmer until the juice is evaporated. It is better not to stir too much as this causes vegetables to mash which is not ideal for the looks of your dish.
  4. You may now add the lemon or orange juice which will give the right bitters too your slightly sweet tasted carrot/leeks combination.
  5. Once served you may add a dash of lemon juice like me for the extra bitterness.
