Green Beans in Olive Oil (Zeytinyagli Fasulye)

This dish makes it to the top 3 on my list of food to ask my mum when I visit them. I’ve never got tired of dipping my bread to its perfectly flavoured sauce all these years. Although you may prepare and freeze it for winter too, this dish is definitely a summer dish as it is best consumed fridge cold and requires beautifully ripe red tomatoes and nothing less.

Ingredients

  • 500 gr of french beans or any type green beans really
  • 1 large onion
  • 3 cloves of garlic
  • 1/3 cup olive oil
  • 5 ripe tomatoes
  • 1 tsp sugar
  • Black pepper
  • Red pepper flakes
  • Salt

Instructions

  1. Cut off the end of beans and wash thoroughly. You may choose to cut your beans into halves if they are too long or large.
  2. Chop your onion and transfer them to the pot where you had preheated the olive oil. Saute the onions until soft.
  3. Chop tomatoes and garlic finely. Mix it together and add them to the onions in the pot.
  4. Add salt, black pepper and red pepper flakes (as much as you like). Let your sauce cook for 5-7 minutes with the lid on.
  5. Transfer your beans in your tomato sauce, mix it well with the sauce, add the sugar, close the lid and let it cook in low heat until the beans become tender enough.
