The word ‘fellah’ comes from Arabic and it means ‘farmer’. This may be the reason why the same recipe is called ‘Arabic Kofte’ in some other parts of the country. It is a popular recipe in South and Southeast of Turkey. The more garlic in the yogurt and more chilli flakes in the sauce the yummier it gets your pretend kofte.
- 1.5 cup fine bulgur
- 1 onion
- 1 egg
- 1 tsp of cumin
- 1/2 tsp of black pepper
- 2 tbs of flour
- 1 tomato
- 2 tbs tomato paste
- 3 garlic gloves
- 1 tsp dried mint
- 1 tsp red chilli flakes
- 50gr butter
- 1 cup of yogurt
- Wash bulgur to get rid of the dust and transfer them to a large bowl. Add 3 cups of boiled water, close a lid and let them softened for 15/20 minutes. When ready all water should be absorbed by bulgur.
- Peel and grate your onions, add them to the bulgur.
- Add your flour, egg, cumin, black pepper and salt to the same bowl and mix well all your ingredients here. When you finish mixing take a small amount on your palm and shape it to a small ball. You may decide on the size depending on time and patience you have but note that the smaller balls are ideal.
- Pour some flour to a plate and place each of your bulgur balls here carefully, rolling them around a little to cover them with some more flour. This will avoid them to stick to each other.
- Boil water in a pot and when ready add your bulgur balls carefully and boild them for about 10-15 minutes.
- In a pan melt the butter and add finely chopped tomatoes, tomato paste, red chilli flakes, some salt and stir them for 3 minutes.
- In a small bowl of yogurt crush the garlic and stir it until you get a runny consistency.
- Place your bulgur balls in the serving dish. Pour the yogurt on top, making sure it covers it all and on very top pour the hot tomato sauce.
- Sprinkle some dried mint and red chilli flakes before serving.
